QUICK AND EASY LOW PROTEIN RICE PUDDING

This recipe makes a delicious pudding, sure to become a favorite. It is excellent either cold or warm. It also keeps well in the refrigerator for several days.
8 ounces liquid Rich's Richwhip Topping
1 1/2 cups water
1 pkg. (4-serving size) cook-type Jello-O Vanilla Pudding & Pie Filling Mix
1/4 cup (50 gm) uncooked Aglutella or Dietary Specialties Rice
1/2 cup (60 gm) raisins
1/4 teaspoon vanilla
1/4 teaspoon nutmeg (fresh grated if possible)
In a saucepan, boil rice for 12 minutes. Rinse and drain the rice in a colander. In a 2-quart Corningware or glass casserole, blend Richwhip, water and pudding mix. Mix the rice, raisins and vanilla into the pudding. Microwave on HIGH for 8.5 - 10 minutes, or until thickened, stirring 3 times during cooking. Stir in the grated nutmeg and sprinkle additional nutmeg on top. Cover. Serve warm or chilled.
Yield: 2 1/2 cups, five 1/2 cup servings.
