PORTOBELLO CHILI:
Ingredients:
1 medium onion, diced
1/2 medium green bell pepper, diced
5 medium Portobello mushrooms, rough chopped
1 Tbsp. garlic, chopped
1 1/2Tbsp. chili powder 1 1/2Tbsp. cumin, ground
1 Tbsp. Cajun spice
1 tsp. paprika
pinch salt
pinch red pepper, crushed
2 oz. bacon fat, strained drippings only
24 oz. tomatoes, diced with juice
16 oz. Water
Directions:
Saute onion, pepper and garlic in bacon fat until onion is translucent.
Add chopped mushrooms and saute.
Sprinkle on the seasonings and stir.
Add the diced tomatoes and water. Simmer for approximately 2 hours. Makes 6 cups.

Chef's Tip:
Good for tacos, on taco salad, or nachos. To make Bolognese sauce for pasta or lasagna, remove the chili, cumin, Cajun seasoning and add basil, thyme and oregano instead. To make it taste like Italian sausage, add fennel seed ( 1 Tbsp = 20 kcal, .9 gm pro, 37 mg PHE).
