TORTILLA CHIPS
Ingredients:

  • 4 Cups plus 2 Tbsp. (454 gm) dp Wheat Starch

  • 5 oz. bacon fat, strained drippings only

  • 5 oz. Water

  • 1 Tbsp. Cajun Seasoning

  • 1 Tbsp. Lawry's Taco Seasoning

  • Pinch sugar

  • Pinch salt

  • 1-2 drops egg-shade food coloring

  • 1 Tbsp. Dietary Specialties Cheese flavored sauce mix, powder

Directions:
  • In a bowl place the wheat starch and seasonings

  • Add the bacon fat and mix until incorporated.

  • Mix the food coloring with the water; add the water to the dough a little at a time until it is solid.

  • Divide the dough into approximately 2 oz balls and roll out flat. Use cornstarch as the flour when rolling out the dough.

  • Cut in wedges and fry in clean oil.

  • Drain and serve.

  • Makes approximately 64 chips.

Chef's Tip:
The bacon fat can be substituted for Rich's Richwhip Non-Dairy Liquid and water. Do not add the sugar, otherwise the chips will be too sweet. This recipe is good for a snack, nachos, or taco salad.
