Clam Spaghetti

  Recipe ingredients:

  Olive oil                         1/4   Cup

  Garlic                               3   Cloves

  Onions                              1   c hopped

  Basil                                 1   Tbl.

  Wine - White                  1/4   Cup

  Butter                                    Dollop

  Clams                               1   Cans

  Oregano                            1   Tbl. fresh (1/2 the amount for

                                               ground)

  Cheese - Parrmesan                To Taste

  Pepper                                   To Taste

  Mushroom                      10   sliced

  Instructions              1. Dump olive oil in skillet and add dollop of butter. Chop the onions and

                                drop into warm oil along with garlic cloves. Cook over very low heat at least

                                 .5 hr.

                               

                                2. Stir in oregano, basil, and black pepper. Pour in liquid of 2 cans clams.

                                Cook to reduce mixture until onions almost mushy.

                               

                                3. Add white wine and continue to reduce. Add mushrooms if using.

                               

                                4. When pasta is done, dump clams into the skillet and shrimp, if using.

                                Drain spaghetti and dump into skillet. Grate parmesan over it and toss the

                                pasta in sauce for at least 5 min.

                               

                                5. Add more parmesan and serve.
