Spice Rubbed Chicken Breast with Lemon-Shallot Sauce

Instructions               

 

1.       Mix salt, peeper, and allspice in small bowl. Then rub mixture on both sides of chicken

2.      Heat 2 Tbl oil in skillet over medium-high heat. Sauté chicken until cooked through ( about 4 min. per side )

3.      Transfer chicken to a plate & tent to keep warm and/or place in warm oven

4.      Add wine to skillet and bring to boil scraping up any brown bits

5.      Stir in chicken broth, 1 Tablespoon lemon juice, and the lemon peel. Boil until reduced by ½ (about 5 min.)

6.      Whisk in shallots, thyme, 6 Tablespoons oil, 2 Tablespoons lemon juice, and ¼ Teaspoon allspice. Season to taste with salt & pepper

7.      Cut chicken crosswise into ½ inch thick slices

8.      Divide chicken and spoon sauce over & serve
