On Thursday and Friday we took advantage of the island activities: kayaking, snorkeling and just having fun.

We never ceased to be amazed by the beauty of the island

One day a few of us paddled over to Middle Caye - about half and hour downwind to get there, an hour upwind back. We visited the Marine Research Center on Middle Caye - not too much going on (everyone was out on a dive).
After dinner we'd always have an activity. One night Phillip the cook told us about Garifuna culture. Garifunas are Africans who escaped from slavery in the Grenadine Islands in the 1700s and wandered through Central America before finally settling and thriving in Belize. Another night, Apolitico, a Mayan, told us about Mayan culture in Belize and what life in his family was like. He told us how his father hunted gibnut, a 20 lb. nocturnal rodent. Suddenly, visions of all of the mystery meat I'd eaten over the past week flashed before my eyes.
